Asafoetida
A dried resin obtained from the rhizomes of two species of
giant fennel that grow in India and Iran. Used to season
vegetables, fish, and Indian sauces, it releases a pungent odor
that disappears during cooking. The Romans used asafetida for
its medicinal properties, and in India it is still prescribed
for flatulence and bronchitis. It can be found in Indian
markets.
