Garam Masala 

A blend of spices from northern India traditionally comprising cumin, coriander, cardamom, black pepper, cloves, bay leaf, and cinnamon. There are several variations, more or less spicy, containing up to 12 spices. Generally used on grilled foods, garam masala may also be added to pilafs.
