Mustard
The edible leaves of the mustard plant are a source of
vitamin C, vitamin A, iron, and potassium. Prepared mustard is
made from the seeds of the plant, which are macerated in wine,
must, and vinegar or water and ground to a paste. It is used to
flavor rabbit, pork, chicken, and fish and is a basic ingredient
in salad dressings, mayonnaise, and remoulade. Whole mustard
seeds are used in marinades, sauces, and curries. Mustards are
small and round in shape with a sweet nutty taste, they can be
either black or yellow. They are used in a wide variety of
dishes and are usually the starting point for many recipes and
are fried in hot oil until they 'crackle'.
